Biscochitos (New Mexico State Cookie) It is the first week of December and my holiday baking has begun. This year I am making batches and batches of Biscochitos, the delicious anise seed flavored, shortbread-like cookie made famous in New Mexico. So famous that in 1989, the New Mexico state legislature made them the New Mexico State Cookie!Making cookies during the holidays is probably one of those traditions that we are all familiar with. There were only two desserts that my Mom baked during the holidays, empanadas and hojarascas. Hojarascas is the name I knew them by in Monterrey, Mexico. This very traditional Mexican cookie is lightly sweetened and typically flavored with anise. They are classic sugar cookies with the blended flavors of vanilla, anise and rum. You must find some time to make these cookies because are simply delicious; one of my best friend's favorites. They are classic sugar cookies with the blended flavors of vanilla, anise and rum. With the correct spelling of the cookie - Biscochuelos or Biscochitos, it was much easier to research where and how these cookies came about. They are traditionally made with cinnamon and anise, sometimes brandy and other times orange juice. Our family uses just the cinnamon and orange juice version.Star Anise Cookies are rustic and simple cookies that are filled with the familiar licorice flavour we all know and love. The flavor and the feel… simply WOW-ed me! It’s in order that perfume-y and intoxicating. This cookie is meant for Christmas and the holiday season however I think it would be easiest for Chinese New Year as well. And for Hari Raya and Deepavali too. Why no longer ya? 😉
I ❤️❤️❤️ you Star Anise Cookies! As I couldn’t in finding ready-made floor star anise (bunga lawang in Malay), I ended up making my very own with mortar and pestle. The freshly grounded scent of star anise sure droves me nuts! Haha I used Five items of superstar anise which is solely nice to make up 2 teaspoons.
Sift flour, baking powder, megastar anise, cinnamon and allspice right into a mixing bowl and add salt. Put aside.
In future I will be able to grind my very own ground cinnamon as neatly. Not allspice even though as I have no idea the place to get hold of the dried end result of pimenta dioica.
In a every other bowl, cream butter and sugar till faded and fluffy (Three mins). Next upload eggs, vanilla seed/extract and blend till blended.
Reduce pace to low and add flour combination bit by bit (coz it’ll be an excessive amount of to deal with in the event you unload all in) until combined. I will simply devour this dough without baking. Haha
Roll dough into two logs about 5cm diameter. Chill until company for approximately 1 hour. I personally counsel freezing the log for 10-15 minutes because I to find chilling ’em doesn’t paintings. The log is still comfortable. With freezing, you’ll have the ability to slice easier.
Yes I know I couldn’t get a really perfect spherical shape. Doesn’t matter because I’m not highest. Haha
My baking time is 14 mins to yield prefect golden brown cookies. Was ready to make round seventy five pieces of this treasured.
The recipe in fact requires coffee and chocolate icing on most sensible. I tried it however didn’t truly like the full taste but even so it might make this cookie too candy. You can take a look at it if you wish to have. I prefer this cookie in ‘undress’ model. Hehe
Tsk, I do know, I know mine doesn’t look like the actual version and yup I copied the photograph glance as neatly coz I love it. 😛
Crispy, crunchy, aromatic, flavorful, yummy, divine… a cookie that brings you to heaven and again. Every chew will make me cross: Mmmmmm…
The sweetness is simply nice too. Though the whole thing is perfect, I would hope for a little bit bit more of big name anise smell because it’s just so crazily yummy. Plan to add an extra 1/2 teaspoon of flooring big name anise in the future.
Do do that recipe ya. Highly recommended by means of me. 🙂
Oh btw, the cookies were gobbled up in just 5 days. Mostly by way of yours in point of fact. LOL
Star Anise CookiesAdapted from Flavours mag (Nov-Dec 2009)Yields about 70-Eighty items
350g all-purpose flour5g baking powder2 teaspoons ground big name anise1 teaspoon ground cinnamon1 teaspoon floor allspice1/2 teaspoon salt
250g unsalted butter200g caster sugar2 massive eggs1 vanilla pod or 1 teaspoon extract (I used 1/2 teaspoon concentrated vanilla extract)
Optional:Coffee icing1 teaspoon fast espresso powder20ml warm milk120g icing sugar
Chocolate icing50g milk chocolate, chopped and melted
Method:1. Place sifted all-purpose flour, baking powder, big name anise, cinnamon and allspice in mixing bowl. Add salt and set aside.
2. Cream butter and sugar until faded and fluffy (~ Three mins). Add eggs one by one. Add vanilla and blend till mixed.
3. Add flour aggregate in batches and blend until mixed. Make two logs (5cm diameter) out of the dough, wrap in dangle film and relax till firm for about an hour. (I find the dough is still comfortable after chilling for an hour. What I might suggest is freeze the log for 10-15 minutes. Then while you slice, you get a nicer round form.)
4. About Quarter-hour earlier than baking start, preheat oven to 180oC. Slice log into 0.5cm thickness. Place on covered baking tray and bake for 10-12 minutes or till golden brown (for my case, my prefect time is 14 minutes; modify baking time accordingly in your oven). Cool for 3-Five mins on baking tray prior to switch to cooling rack.
To get ready coffee icing:1. Dissolve espresso powder with milk the usage of a whisk. Add icing sugar and blend neatly. The icing should now not be runny and in addition too stiff.
To ice cookies:Fill espresso icing and melted chocolate into particular person piping bags. Decorate cookies with desired patterns.
